Pecan Waffles with Whipped Maple Butter

Annette is the Homestead Mama behind Azure Farm, a homestead in GA, where she lives with her husband and their precious almost 2 year old daughter Ava. Annette and her family have a beautiful homestead where they keep about the cutest animals you’ve ever seen, and have beautiful gardens and an amazing greenhouse. 

 

I believe in cooking healthy delicious meals for my family and to be breakfast is the most important! It starts the day and gets us fueled for whatever homestead adventure we may come across. 


These pecan waffles are a favorite and perfect for the whole family! Plant-based and GF they are also for anyone with allergies as well! Little Ava has been helping me much more in the kitchen and it’s so fun to have her be a part of all we do! 

For waffles 

1 can coconut milk ( full fat) 

2 cups gluten free oat flour  ( or Bob’s 1:1 Gluten Free Flour) 

1/2 cup pecans

2 Tbs honey 

2 Tbs vanilla extract 

2 Tbs baking powder

1 tsp salt 

For Butter 

8 oz Unsalted plant-based butter  at room temperature 

3/4 cup grade A maple syrup 

1/4—3/4 tsp kosher salt. 

DIRECTIONS: 

Mix all ingredients well, if too thick to mix well add a tiny bit of water or almond milk to fully mix. 

Heat waffle maker to high ( These waffles cook best in a Belgian Waffle maker) 

Spray with coconut oil and scoop batter with measuring cup into waffle maker.  About 1/4 for each waffle. 

Cook on high until golden brown. About 5 min each waffle. 

While waffles are making place butter in stand mixer or hand held electric mixer and bowl. Whip slowly for 1-2 minutes until fluffy. Add maple syrup an salt. Whip again until all is mixed well. Serve immediately or store in air tight container for a  month in fridge. 

Serve waffles with fresh fruit and maple butter. 

Makes approximately 4-6 full sized waffles
